The secret to perfect Jollof Rice is allowing the rice to absorb the rich tomato sauce and spices slowly.
Ingredients:
Tomato Sauce:
2 large tomato
1 red bell pepper
5 habanero pepper
1 fresno chili pepper
3 cloves garlic
1 tablespoon ginger
Rice Mixture:
1/3 cup olive oil
1 red onion
1 teaspoon salt
1/4 cup tomato paste
2 tablespoons smoked paprika
1 teaspoon curry powder
1 teaspoon thyme
2 1/4 cups basmati rice
2 bay leaf
1 cups of chicken broth
1/2 teaspoon of knorr seasoning
2 cups of water
Garnish (Optional):
Green onions
Preparation:
Blend tomato, red bell pepper, habanero pepper, chili pepper, garlic, and ginger until smooth.
Heat olive oil and cook diced onion with salt for 5 minutes.
Add tomato paste and cook for 3 minutes.
Pour in blended tomato sauce and cook for 5 minutes (stir occationally).
Season with paprika, curry powder, thyme, and knorr seasoning and salt
Mix in the rice until coated with sauce.
Add bay leaf and chicken broth.
Cover and cook for 20 minutes without stirring.
Rest rice for 12 minutes with the lid closed.
Fluff rice and garnish before serving.
