The secret to perfect Jollof Rice is allowing the rice to absorb the rich tomato sauce and spices slowly.

Ingredients:

Preparation:

  1. Blend tomato, red bell pepper, habanero pepper, chili pepper, garlic, and ginger until smooth.
  2. Heat olive oil and cook diced onion with salt for 5 minutes.
  3. Add tomato paste and cook for 3 minutes.
  4. Pour in blended tomato sauce and cook for 5 minutes (stir occationally).
  5. Season with paprika, curry powder, thyme, and knorr seasoning and salt
  6. Mix in the rice until coated with sauce.
  7. Add bay leaf and chicken broth.
  8. Cover and cook for 20 minutes without stirring.
  9. Rest rice for 12 minutes with the lid closed.
  10. Fluff rice and garnish before serving.
